About the Recipe

Moussaka is one of the most beloved dishes of the Mediterranean—a hearty, layered casserole that transforms simple ingredients into something truly memorable. In this plant-forward interpretation, roasted eggplant, zucchini, and potatoes are layered with a rich lentil and mushroom ragù simmered with tomatoes, garlic, herbs, and a touch of warming nutmeg. The dish is crowned with a silky béchamel and baked until golden, bubbling, and irresistibly fragrant.

Ingredients

For the Vegetable Layers:

2 large eggplants, sliced ¼-inch thick

2 medium zucchini, sliced ¼-inch thick

2 large Yukon Gold potatoes, sliced ⅛-inch thick

Olive oilSalt and pepper


For the Ragù

:2 tbsp olive oil1 large onion, diced

2 carrots, diced

2 celery stalks, diced

8 oz mushrooms, finely chopped

3 cloves garlic, minced

1 tsp dried oregano1

tsp dried thyme

¼ tsp ground nutmeg

1 tbsp tomato paste1

1 (28 oz) can crushed tomatoes

1 cup cooked brown or green lentils

½ cup toasted walnuts, finely chopped

Salt and pepper to taste


For the Béchamel

:4 tbsp butter

4 tbsp olive oil

6 tbsp all-purpose flour

4 cups oat milk

2 tbsp nutritional yeast

1 tbsp white miso (optional)

½ tsp ground nutmeg

Salt and white pepper to taste


Preparation

Prepare the Vegetables

Preheat oven to 425°F.

Arrange eggplant, zucchini, and potato slices on sheet pans. Brush lightly with olive oil and season with salt and pepper.

Roast for 20–25 minutes, turning once, until lightly golden and tender. Set aside.

Prepare the Ragù

Heat olive oil in a large skillet over medium heat.

Add onion, carrot, and celery. Cook until softened, about 8 minutes.

Add mushrooms and cook until their moisture evaporates.

Stir in garlic, oregano, thyme, nutmeg, and tomato paste. Cook 1 minute.

Add crushed tomatoes and simmer 15 minutes.

Fold in lentils and walnuts. Season with salt and pepper.

Cook until thick and rich. Remove from heat.

Prepare the Béchamel

In a saucepan, melt butter and olive oil over medium heat.

Whisk in flour and cook for 2–3 minutes to form a blond roux.

Gradually whisk in oat milk.

Cook, stirring frequently, until thickened.

Add nutritional yeast, miso (if using), nutmeg, salt, and white pepper.

The sauce should be thick enough to coat a spoon.

Assemble

Reduce oven temperature to 375°F.

Lightly oil a 9x13 baking dish.

Layer:

  • Half the potatoes

  • Half the eggplant and zucchini

  • All of the ragù

  • Remaining vegetables

Spread béchamel evenly over the top.

Bake

Bake uncovered for 50–60 minutes, until golden and bubbling.

Allow to rest at minimum 30 minutes before slicing in order for the bechamel to set properly.

Serve

Serve warm with a simple Greek salad, crusty bread, and good company.


Chef's Note:
Moussaka is one of those dishes that rewards patience. It may be tempting to cut into it immediately, but allowing it to rest after baking creates cleaner slices and a better texture. In many ways, it's even better the next day.
